Teenage Mutant Ninja Turtles

Nothing beats having your own home made pizza; my grandma use to try her way of making them for my sister and I when we were young.  Ah those were the days when I knew very little of cooking and I hadn’t yet owned a kitchen.  I took this recipe from the MasterChef – Season 1 cook book and did a little improvisation.

Ingredients – Pizza base
  • 4g dried yeast
  • 5g sugar
  • 5g salt
  • 1/4 cup lukewarm water
  • 1/4 tbsp olive oil
  • 110g plain flour
Ingredients - Pizza Sauce
  • 100g canned chopped tomatoes
  • pinch or oregano
  • pepper
  • salt
  • 2 tbsp of BBQ sauce (optional)
Ingredients – Topping
  • 1/4 cup chopped parsley
  • 40g grated mozzarella
  • 50g sliced salami (the hotter the better)
  • 4 cherry tomatoes (halved)
  • 150g buffalo mozzarella
  • 1/4 cup mint leaves
  • Handful of Basil leaves
  • 4-8 prawns (deveined and de-shelled)
Directions
  1. For the pizza base – combine yeast, sugar, salt and water in bowl
  2. Whisk to combine and set aside for 10 mins (or until bubbles appear on surface; the yeast has activated!)
  3. Transfer to a large bowl and add flour and mix
  4. On a floured surface kneed the dough until smooth.  Place in bowl and place it (covered) in a warm place until the dough doubles in size
  5. For the sauce base – cook the tomatoes in a shallow pan, add oregano, salt, pepper and the BBQ sauce
  6. Bring to a boil then let it sit for 10 mins before pureeing
  7. Preheat oven at 250 degrees Celsius (if you have a pizza stone you can place it in)
  8. Remove dough and ‘punch’ it to remove the air
  9. Roll dough to the shape desired and place in a pizza tin (or very hot pizza stone)
  10. Prick the dough with a fork liberally
  11. Add sauce base and sprinkle the parsley and mozzarella
  12. Add salami, cherry tomatoes, basil and prawns
  13. Cook in oven for 6-8 minutes until crust becomes golden brown
  14. Tear off chunks of buffalo mozzarella and scatter over the pizza with mint leaves and serve
I reckon this pizza would even appeal to the Teenage Mutant Ninja Turtles! “Cowabunga Dude!”
