Nothing beats having your own home made pizza; my grandma use to try her way of making them for my sister and I when we were young. Ah those were the days when I knew very little of cooking and I hadn’t yet owned a kitchen. I took this recipe from the MasterChef – Season 1 cook book and did a little improvisation.
Ingredients – Pizza base
- 4g dried yeast
- 5g sugar
- 5g salt
- 1/4 cup lukewarm water
- 1/4 tbsp olive oil
- 110g plain flour
- 100g canned chopped tomatoes
- pinch or oregano
- pepper
- salt
- 2 tbsp of BBQ sauce (optional)
- 1/4 cup chopped parsley
- 40g grated mozzarella
- 50g sliced salami (the hotter the better)
- 4 cherry tomatoes (halved)
- 150g buffalo mozzarella
- 1/4 cup mint leaves
- Handful of Basil leaves
- 4-8 prawns (deveined and de-shelled)
- For the pizza base – combine yeast, sugar, salt and water in bowl
- Whisk to combine and set aside for 10 mins (or until bubbles appear on surface; the yeast has activated!)
- Transfer to a large bowl and add flour and mix
- On a floured surface kneed the dough until smooth. Place in bowl and place it (covered) in a warm place until the dough doubles in size
- For the sauce base – cook the tomatoes in a shallow pan, add oregano, salt, pepper and the BBQ sauce
- Bring to a boil then let it sit for 10 mins before pureeing
- Preheat oven at 250 degrees Celsius (if you have a pizza stone you can place it in)
- Remove dough and ‘punch’ it to remove the air
- Roll dough to the shape desired and place in a pizza tin (or very hot pizza stone)
- Prick the dough with a fork liberally
- Add sauce base and sprinkle the parsley and mozzarella
- Add salami, cherry tomatoes, basil and prawns
- Cook in oven for 6-8 minutes until crust becomes golden brown
- Tear off chunks of buffalo mozzarella and scatter over the pizza with mint leaves and serve
