Once Upon a Cupcake - Orange Iced Cupcakes

Iced Orange Cupcakes

This hearty little creation was made by the Chili Padi and myself a few days ago.  It is amazing what cool recipes you find via podcast.  I got this one from a podcast entitled “The Cupcake Show” so here is the recipe in all it’s glory.. and yes it is relatively easy to make!

Orange Iced Cupcakes (makes 12)

For the Cupcake itself here is what you will need

  • Muffin Tray liners (the “cup”)
  • Zest of 2 oranges
  • 1/4 Cup Orange Juice
  • 1/2 Cup Unsalted Butter
  • 1/2 Cup Sour Cream
  • 2 Medium Eggs
  • 3/4 Cup of Sugar
  • 1 1/2 Cups of Flour
  • 1 Tea Spoon Baking Powder
  • 1/2 Tea Spoon Salt
  • 1/2 Tea Spoon Baking Soda

Directions

  1. Pre-heat the oven to 180 Degrees Celsius
  2. Mix butter in mixer until creamy
  3. Add sugar and mix well
  4. Add grated orange zest and incorporate well
  5. Add two eggs (one at a time)
  6. Add orange juice
  7. Add sour cream
  8. Mix well
  9. In a separate bowl combine flour, baking powder, salt and baking soda
    • Combine with wet batter and mix well
  10. Distribute batter into lined muffin tray and bake at 180 degrees for 18-20 minutes until the top browns
  11. Remove and cool in tray for 10 minutes
  12. Remove from tray and cool thoroughly (if the cupcakes are still warm when applying the icing the icing will melt!)

Once the cupcakes have cooled you can make the icing, what you’ll need is the following:

  • Zest of 2 oranges
  • 1/4 Cup of orange juice
  • 1/2 Tea Spoon of lemon zest
  • 2 Tea Spoons of lemon juice
  • 3 Table Spoons of unsalted butter
  • 3 Cups of icing sugar

Directions

  1. Mix orange zest with orange juice
  2. Add lemon zest
  3. Add lemon juice
  4. Cream butter with mixer
  5. Add sugar to the creamed butter
  6. Add juice and rest
  7. Lightly whip until fluffy
  8. Apply icing to cooled cupcakes

And volla, you’re done!  Simple yeah?
